These are the kind of pancakes you'd find at a fancy café and wish you could make yourself. Well now you can.
Who said pancakes weren’t healthy!? These are perfect for your kids: they're delicious and super nutritious. Buckwheat is high in fibre, protein, and contains all eight amino acids. It also offers a good dose of magnesium, copper, zinc, and manganese. Brain food to fuel their active lifestyle.
Vegan and gluten free with no added sugar. The perfect breakfast, brunch or desert the whole family will enjoy.
Organic Ingredients:
- 3/4 cup buckwheat flour
- 2 tbsp flaxseed meal
- 1 tsp gluten free baking powder
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 2 ripe bananas, mashed
- 1 1/2 cups almond milk
- 1 tbsp coconut oil
Method:
1: Place all dry ingredients in a large bowl.
2: Combine bananas and almond milk and fold into dryingredients until just combined.
3: Heat oil in a fry pan and spoon mixture into the pan.
4: Cook until bubbles appear and the sides have firmed.
5: Flip and cook again until golden brown.
To Serve:
Top these with your favourite fruits, nuts or seeds, oh and don't forget a drizzling of natural maple syrup and a dollop of coconut yoghurt.
